Banana Cake

When there are 6 or 7 bananas just sitting on the counter rotting away, might as well bake some cake. I always throw them away when they get brown but I've been baking so much lately that I'll use anything and everything instead of letting it go to waste. We probably won't eat the whole cake and I'm not knocking on the neighbors door to give them any more baked goods, {they probably threw my fudge away thinking i poisoned it} but it's fun to bake and that's all i been doing lately.

It's so funny because I used to be a junk food junkie, I still like a yummy treat but the more baking you do, the less you tend to eat. I don't usually eat all of whatever I make....It's just too much. I guess I enjoy baking better than cooking. I'm forced to make the fam meals, so to make it exciting for me......I bake at the same time.

Bananas don't really make me jump for joy but it's nice to try different things.


It turned out really good. I used Paula Deens recipe except I cut out the pecans and frosting.

3 cups all-purpose flour, plus more for pans

2 cups sugar

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

3 eggs, beaten

3/4 cup vegetable oil

4 large ripe bananas, mashed

1 cup chopped pecans

1 1/2 teaspoons vanilla extract

In a mixing bowl, stir together the flour, sugar, baking soda, cinnamon and salt. Add the eggs, the oil and stir just until the dry ingredients are moistened; do not beat. Stir in the bananas, pecans, and vanilla. Bake for 25-30 minutes.

That looks delicious!! Almost makes me want to dig my bananas out of the freezer and whip that cake up!!

Right about now I'm wishing we were neighbors. I'd do the cooking and you could do the baking!!

That looks delicious! i wish i was more into baking. I love to bake but I really can't eat what I bake so I tend to not bake. haha.

Dang that looks good. I always end up throwing bananas away so I'm gonna write this on a post it and stick it on the inside of my cabinet. That's my fave cookbook, the insides door of my cabinets are covered in post it notes with recipes on them. Organization at it's finest. Not.

Thanks for the recipe, now if only I had aging bananas! Rawr!

Yum! We call it banana BREAD so it doesn't sound like a dessert. I also add mini chocolate chips in place of nuts. YUM!
